Ingredients
  

  • 4 pieces naan bread or other wraps like large flour tortillas, mini cauliflower pizza crusts, coconut flour tortillas, etc.
  • 1 cup lemon rosemary hummus see below for recipe OR your favorite flavored hummus
  • 4 cups baby greens I used spring mix OR chopped romaine lettuce
  • 3 cups shredded cooked chicken like rotisserie chicken, grilled chicken, or slow cooker whole chicken
  • 2 cups veggie mixture with homemade chimichurri sauce see below for veggie recipe
  • 4 tablespoons crumbled goat cheese
  • For garnish (added to each wrap)
  • 2 tablespoons extra chimichurri sauce mixed with 2 teaspoons of water to thin it out
  • 1/2 cup peeled, sliced & quartered cucumber
  • 1 cup quartered cherry tomatoes
  • 1/2 cup peeled & diced red onion
  • 3 tablespoons homemade chimichurri sauce
  • 1 container plain hummus 8 oz
  • 2 teaspoons lemon zest from 1 small lemon
  • 1 tablespoon lemon juice
  • 2 teaspoons finely chopped rosemary
  • 2 pinches crushed red pepper flakes

Method
 

  1. Combine the ingredients for the homemade chimichurri sauce in a blender or food processor, blitz until combined, taste and add more vinegar or oil if needed. You can also finely chop everything by hand & combine in a bowl or glass jar. Set the sauce aside to let the flavors develop while you prepare everything else.
  2. Lightly toast both sides of the naan bread or other wraps using your oven's LOW broil setting, a skillet set to medium heat, or a toaster oven.  This should take 3-5 minutes. Set a timer so you don't forget about the wraps & so you can flip them halfway if using the broiler. We don't want them to burn!
  3. Meanwhile, prep the cucumbers, tomatoes & onion and add them to a medium-sized bowl. Toss the veggies with 3 tablespoons of the chimichurri sauce.
  4. Lay the naan bread (or other wraps) on a cutting board or large baking sheet with the inside facing up. 
  5. Prepare each wrap as follows: Spread 1/4 cup of hummus across the whole surface, place 1 cup of the baby greens or lettuce on half of the wrap, then the shredded chicken on the other half. Scoop 1/2 cup of the chimichurri veggie mixture on top of the greens, then crumble 1 tablespoon of goat cheese over the veggies.
  6. Garnish each chicken wrap by drizzling an extra 2 tablespoons of chimichurri sauce over the chicken & veggies. If the chimichurri sauce is too thick, mix it with 2 teaspoons of water to help thin it out & make it easier to drizzle.
  7. Serve the wraps immediately while still flat (letting each person fold it themselves before eating) OR for a pretty presentation, tie a small length of hemp cord or baker's twine around each wrap beforehand. 

Notes

Ingredient Swap: I often use leftover rotisserie chicken here for convenience, but any cooked, shredded chicken works beautifully.
If you don't have goat cheese, a sprinkle of feta or even a sharp cheddar adds a nice salty punch.
Storage Tip: These wraps are best assembled fresh, but you can prep all the components ahead.
Store the chimichurri sauce, dressed veggies, and shredded chicken separately in airtight containers in the fridge for up to 3 days.
